Herzig – The next Michelin Star in Vienna?

While having enjoyed culinary delights at 50+ Michelin Star restaurants all over the world, I also like to discover upcoming “stars” closer to home. Recently I found a gem in an unpretentious area of my home City of Vienna.

Sören Herzig, who runs the restaurant bearing his name, is a relatively young chef, who has learnt amongst others at 3 Michelin Star Chef Juan Amador. He tells me that he is working very hard to get his first Michelin Star.

After having settled in a modern stylish designed ambience, the Amuse Bouche is a trilogy of chicken salad in a roll, ham and cheese sandwich and Loup de Mer (Chinoise).

That’s an interesting one before the actual menu starts: passion fruit, coffee and Aji Amarillo.

The seven course menu starts with Caviar, Beluga lentils, whey and horseradish.

The first of 3 fish courses: trout, herbs, eel bouillon and crispy salad.

Next my personal highlight: Scallop with pineapple, sea buckthorn and Thai aromas. A fantastic combo! One I will try at home.

Rounding up the fish series is a pike dumpling with cabbage sprouts, dashi and lime butter.

A poussin (young chicken) goes as the meat course, along with Jerusalem artichoke, plum and Madagascar pepper.

The first dessert is called “Amaretto sour” with almond and citrus. Very delicious.

My final highlight is an innovative interpretation of the classic Tarte Tartin. With Williams pear, Oolong tea and Macadamia Nougat. All in all a great experience. In my opinion Sören is on his best way to become a Michelin starred chef.
